Acclaimed chef Jose Andres, a disciple of Spanish molecular wizard Ferran Adria, has trained his crew well. Pop a liquid olive, and enjoy the ride in this bright and whimsical Philippe Starck-designed dining room. You will float to a happy place after nibbling on oysters, crab, caviar, smoked salmon, cobia, sea urchin, hamachi, geoduck clam, live scallops, lionfish, abalone and monkfish.
