There’s a science to a perfect Cuban sandwich, and this Pompano Beach food truck has it figured out. All the ingredients of the Big Cubano are chosen with care. The pork is marinated for 24 hours before being slow roasted. The freshly baked bread comes from Tropical Bakery and Cafeteria in Palm Beach County. The homemade pickles are sweet and slightly spicy. The smoked ham and Swiss cheese, imported from Finland, give it the final touches. Besides the Cuban recipes, the menu features Hispanic- and Caribbean-inspired dishes, such as jerk chicken wings and the Tower of Pork Power, made with tostones, slow-roasted pork and Caribbean slaw. The truck, owned by father, son and daughter, is often parked by local breweries. In December, the family will open a brick-and-mortar restaurant in Pompano Beach, which will also feature a local-craft-beer menu.
