As dedicated as most colleges and universities are to expanding students' minds and giving them a fuller understanding of the world around them, the majority of the courses they offer are, let's face it, flat-out freakin' boring. Does anybody really like to study macroeconomics? Seventeenth-century literary theory? Or, horror of horrors, statistics? However, South Florida's institutions of higher learning offer at least a few courses the titles of which alone pique our interest. Some of the following may simply be extra-curricular classes students take to lighten their course loads, but we're tempted to go back to school just to enroll in them.
