Caspian refers to the Caspian Sea, which is actually an oil-rich lake that borders five countries, including Iran. Persian refers to the ancient land of Persia before it officially became known as Iran in 1935. Grill has nothing to do with geography but is a reference to the extraordinarily flavorful meat, chicken and fish kebabs served at this simple and wonderful Plantation café. Working from a cookbook that dates back 3,000 years, the Caspian kitchen excels at dinner with a purée of eggplant; a soup made with lentils, garbanzo and kidney beans, and noodles; chicken chunks simmered in an extraordinary pomegranate-and-walnut sauce; and beef stewed with split peas in a subtle tomato sauce. The lunch buffet served weekdays is just as rich and diverse.
