The Web site Iranmania.com reports that in Iran most restaurants tend to serve only kebabs, leaving the complex richness of Persian cooking to be enjoyed almost entirely in homes. Fortunately the 3,000-year-old cuisine, which is considered the planet's oldest, doesn't get short shrift at Caspian Persian Grill. One of only a handful of Persian eateries in Florida, the modest café does justice to ancient traditions with fragrant beef, lamb and chicken dishes that merge fruits, vegetables, herbs, grains and beans, like kidney, garbanzo or lentil. The appetizer of kashkeh bademjan combines an earthy eggplant purée with garlic, yogurt and mint, and tops it with delicate, crisp fried onions. Entrées include chunks of white-meat chicken smothered in an addictive pomegranate-and-walnut sauce that you won't soon forget.
