Peruvian restaurants are judged primarily by their seviches, and Totoritas keeps raising the standard every year with its selection of lemon-infused seafood dishes. For the uninitiated, seviche is fresh fish "cooked" by lemon juice and served cold, usually with sweet potato, a small piece of corn on the cob and cancha, a crunchy, fried-corn cake. The signature dish in Peru, seviche meets the national standard at Totoritas, where marinated pieces of fish fillet, shrimp, squid, clams, mussels and octopus get combined in a variety of simple and vibrant main courses. The seviche dishes alone, most of which cost less than $10 for lunch and dinner, would keep you going back to Totoritas, but there's much more to recommend, including Asian-style chicken and beef fried rice, roast chicken (another Peruvian trademark) and Latin-style grilled steaks.
