If you don't order the mussels at Timpano, your server may insist that you do and even offer to pick up the tab if you aren't completely satisfied. There's not a safer bet to be found on the menu at this downtown restaurant that prides itself on its steaks, pastas and "tall martinis." Priced at $9.95, the dish combines black mussels with a liberal splash of olive oil and kosher salt in an iron skillet, then flame-roasts them on the stove. After your server presents the mollusks in the steaming skillet, you'll need just one bite to realize you are not only going to pay for the dish but are going to thank him for insisting you order them. For maximum flavor, pick the mussel out of the shell and scrape the drippings in the skillet with it. The dish can be ordered as part of a meal or taken in the lounge with a martini, beer or glass of wine.
