You might go to Alligator Alley with the intention of simply sucking back a few cold ones while listening to a variety of local and touring rock, funk, blues and roots bands. But once you see Iggy the Chef working his magic at the grill, tossing spices into metal bowls, flames shooting perilously close to his long scruff of a beard, you may be sorely tempted to sample some of the Alley’s cuisine. So well-regarded is the grub that celeb grillmaster Bobby Flay sent in a crew to tape a segment of his cable-TV show BBQ With Bobby Flay, which aired in July. The program featured the 2-year-old venue’s signature barbecued alligator ribs, which owner Karl “Kilmo” Pacillo has described as a cross between smoked fish and baby-back ribs. The Alley’s gumbo has also won acclaim; laden with sausage and beans and topped with a generous sprinkle of scallions, its version of the Louisiana staple earned top honors at Fort Lauderdale’s Cajun-Zydeco Crawfish Festival three years in a row. The Alley also makes a variety of po’ boys and barbecue sandwiches, and snack items such as gator bites and chicken wings, including Iggy the Chef’s Original Honey Jack wings, flavored with Jack Daniel’s.
