Not only does Coal Mine Pizza make its own fresh mozzarella cheese on-site, but it uses specially-filtered water aimed at mimicking the H2O in Brooklyn. Legend has it Brooklyn's tap water is the crucial ingredient in baking a perfect pie. Coal Mine stays true to the borrough with a dozen ultra-thin crust pies that cook at intensely high temperatures in the coal-fired ovens.
