At Shorty's the cooking process brings a crisp exterior but only light smoke to chicken, beef and pork. This is fine -- it's barbecue, not smoked meat after all -- and the delicate flavors are perfectly accented by three different barbecue sauces. One of them is a pungent vinegar-laced sauce with a subtle fruitiness.
