Aruba Beach Cafe's Seafood Louie Salad
1 pound cooked, peeled and deveined shrimp
1 pound lump crabmeat, or good quality crabmeat blend
½ pound cooked langostino lobster meat, or cooked lobster meat, diced
Louie dressing (see recipe)
1 large head romaine lettuce, washed and cut
1 large cucumber, peeled and sliced
4 plum tomatoes, quartered
4 hardboiled eggs, peeled and halved
Paprika, for garnish
1 Place seafood in a large bowl. Add Louie dressing, stirring gently to combine.
2 Divide lettuce between four large individual serving bowls. Top with seafood mixture. Garnish each bowl with cucumber, tomatoes and eggs. Sprinkle with paprika.
