Calder hires new executive chef (from Gulfstream)

 Calder Casino & Race Course has announced Kasner Willis as its new executive chef.

 Willis spent the last seven years at Gulfstream Park Racing & Casino, most recently as an executive chef. There, he provided support for eight concession outlets and two food courts. Willis developed his career in Cleveland, where he worked as the executive chef at Thistledown Racetrack.

  Calder publicists provided this Q-and-A:

Q: What style of cooking or food are you most passionate about?
A: That’s hard to pick, but I would have to describe my style as American Cuisine.


Q: What are some of your favorite ingredients to work with?

A: I would have to say regional ingredients are my favorite to work with. But what’s important is having a large variety. Variety is key.


Q: If you could have only one dish for the rest of your life, what would it be?
A: Well, I’m a meat and potatoes kind of guy. My taste is simplistic.


Willis worked as the executive chef for the International Auto Show in Detroit, his hometown, and he  got to specially prepare a bowl of chicken noodle soup for former President Bill Clinton. He’s cooked for Bob Dylan, Marilyn Manson and Bruce Springsteen.

Willis is a resident of Miramar, Florida, and has a daughter, Chavon, and a son, Cameron.
