Brett Chiavari has hired a new executive chef, Matthew Webb, for his prehistoric-themed taco shop with faux rock treatments and has updated Friday Ramen Noodle Nights and Sunday brunch.
New ramen bowls are Peking hoisin-glazed duck with cabbage, cucumbers, mustard greens, scallions and egg and Hong Kong marinated flank steak with scallions and egg (both $15).
For brunch, steakhouse eggs Benedict with creamed spinach and peppercorn béarnaise atop onion rings and The Grand Slam breakfast ramen with Asian pork sausage, crispy pork belly, scallion pancake and sunny-side up eggs are new (both $12).
"We have been receiving a lot of praise for our Ramen Night, and not everyone can get here on a Friday night, so we thought why not make a breakfast ramen?" says Webb, who has returned to his home state after adventures such as opening his own Smokey's BBQ and Diner in Oklahoma City. "That way, our brunch regulars can get a taste of our ramen as well. They will get bacon, sausage, pancakes and eggs but ramen style."
