The owners of Bulla Gastrobar in Coral Gables and Pisco y Nazca in Kendall have opened this new restaurant in the new Shops at Downtown Doral.
"My interpretation of modern Spanish cuisine comes from a lifetime of experience with a passion for the native food," says Executive Chef Miguel Rebolledo, who worked for renowned Spanish chefs Ferran Adria at El Bulli and Jose Andres. "For example, Spanish hake is one ingredient I'm incorporating into different dishes."
The Spanish chef's creations, such as Cubano Iberico ($19) and arroz marinero — a seafood rice dish finished with plankton ($28), supplement Bulla signatures, such as grilled cumin pork with mojo verde and Greek yogurt ($9) and Huevos Bulla with serrano ham, potato foam and truffle oil ($10).
Spanish sherry appears in La Madrileña with bourbon and apple-cinnamon syrup and the Seville Sour (both $12).
Lunch and dinner are served daily, plus weekend brunch. Leather and contrasting dark and light woods accent stylish décor, inspired by modern Barcelona design. An open kitchen highlights a raw bar and tapas bar, while a larger bar is the centerpiece.
