The chef and owner of Midtown's Sakaya Kitchen and Blackbrick Chinese & Dim Sum has debuted this Southern-inspired restaurant in the Confidante Miami Beach hotel.
"I have had my eye on midbeach for a while," Richard Hales says. "I am loving exploring the heirloom grains and seeds being grown in the South. The butchery and smoking culture is steeped in history."
Highlights include Nashville hot chicken ($22), cumin lamb ribs ($23) and Mason jar snacks ($25), such as egg-and-ham salad.
"I was born in Louisiana," Hales says. "My dad loved to cook Cajun, so I grew up on the flavors of gumbo and etouffee. Growing up in Florida, we were grilling out, shucking oysters and smoking meat. All of these influences show up in Bird & Bone and how we interpret those memories with the great sources of today."
His wife, Jenny Hales, crafts the desserts, such as chocolate bourbon cake with dulce de leche ice cream ($12).
The covered setting is entirely alfresco, with distressed wood tables, rustic mirrors and string lights until the interior opens in February after renovation to emulate a contemporary farmhouse.
Breakfast and dinner are served daily, with Sunday brunch to come. Lunch is available poolside.
