Naked Crab Seafood Kitchen and Cocktail Bar

Celebrity chef Ralph Pagano has taken over culinary operations at the hotel as part of its overall renovations and launched this venture in the former Dos Caminos.
“Confession: I have a crab addiction — stone, king, Dungeness or blue. I could live my whole life sipping a cold beer while eating hot crab dipped in butter,” says Pagano, who also owns Naked Taco and Naked Lunch in Miami. “We’re cooking up classic signatures like snapper and mahi that are kissed with butter, salt and lemon ($19), mixed with ceviches ($14-$15) poke ($14) and an oyster and clam bar.”
His favorite is Eggs+Bacon+Toast with caviar and pork belly ($29). “It has the perfect combination of salt, texture and flavor,” he says.
Other highlights include grilled octopus ($12), king crab avocado salad ($16), sesame-crusted Crazy Sexy Tuna ($26), seafood pastas ($21-$24) and steaks ($24-$79).
Bananas Foster and Flaming Coffee are prepared tableside on a cart (both $15).
Pear Necessities with rum and Watermelon Rum Punch are Pagano’s favorite cocktails ($12).
Three meals a day are served amid neon signs, vintage local black-and-white photographs, food-themed chalkboard artwork over taupe banquettes, plus a patio.
