Michael Ritzer fell in love with poke in Hawaii during a family vacation from his executive job at an international technology firm.
"I have always had a secret passion for the culinary world, especially Asian/Pacific cuisine," he says. "In a bold move, I left corporate America and began a three-month tour of Hawaii and California, experiencing variations of poke. It is fresh, healthy and absolutely delicious."
The result is his new fast-casual Hawaiian eatery focusing on raw, cubed fish salad.
"Offering the opportunity for customers to build their own bowl is exciting," he says. "My wife makes our soy ginger, and customers have been asking to purchase it by the bottle."
Specialty poke bowls ($11.95, small; $13.95, large) include the Kona with spicy tuna, edamame, daikon, onion, sesame and spicy mayo, the Maui with Norwegian salmon, avocado, mango, cucumber, masago and soy ginger and the Lu'au with tuna, seaweed salad, jalapeno, edamame, sesame, crispy onions and Sriracha.
Hawaii background music plays amid colors of turquoise, orange and white, accented by wood.
Lunch and dinner are served Sunday through Thursday and lunch only on Fridays.
