Bartender's Best: Great Balls of Fire at Diamond Strike Lanes

Who: Mary Betts

Where: Diamond Strike Lanes, 2200 N. Federal Highway, Pompano Beach, 954-941-0968,

Behind the drink: To celebrate more than 50 years of bowling excellence, bar staff along with the special events director created a trio of signature cocktails for Diamond Strike Lanes. With fun names such as the Gutter Ball, Double Strike, and Great Balls of Fire, these cocktails demonstrate how creating your own cocktails can enliven any celebration.

What it is: A savory cocktail featuring tequila, jalapeno peppers, guava nectar, lime and ginger ale.

What she says: "The Great Balls of Fire is a surprisingly refreshing drink with a little kick," says bar manager and bartender, Mary Betts. "It will be formally introduced and featured at Diamond Strike Lanes' upcoming anniversary party."

That's a spicy margarita: Drinks with a kick are trending all over the country, with spicy, house- infused tequilas taking the lead. In addition to jalapeno and chipotle peppers, spirits are being infused with various chilies and cayenne pepper. As with any cocktail, balance is of primary importance. Citrus and tropical fruits pair well with spicy ingredients, but remember to start slow. A little spice can go a long way.

Great balls of fire

2 jalapeno peppers

1 1/2 ounces tequila

1 ounce lime juice

1/2 ounce guava nectar

4 ounces ginger ale

Muddle jalapeno peppers in a cocktail shaker. Add the rest of the ingredients and fill the shaker with ice. Shake well. Strain and pour over an ice-filled rocks glass. Garnish with a jalapeno pepper.

Makes 1 cocktail.
