Two brothers, who are Orlando restaurateurs, have moved into the upscale space of the former Sapphire Indian Cuisine in Royal Palm Place.
“The menu is divided into eclectic and traditional dishes with modern techniques,” says co-owner Christopher Corda, who grew up in Bombay and earned a Michelin star in New York. “We offer a large selection of seafood, in addition to dishes from less-known regions, such as Bihar, Pondicherry and Rajasthan. All of the food is made using freshly ground spices.”
Chicken in a sauce of ground mustard seed and caramelized onion reduction, called dhaka da murgh ($18) and Tamilian fish curry ($24) are his grandfather’s recipes.
Signatures include duck chili roll ($9), grilled lamb belly on roti ($11) and Pastooni lobster masala served in a coconut shell with tomato-butter sauce ($32).
Some of the cocktails ($12) incorporate Indian elements, such as the Tanjore Margarita with tamarind juice.
Most of the chic decor from Sapphire has been preserved, with white-leather tufted booths and banquettes contrasted by blue Moroccan lanterns. Wicker booths now grace the courtyard lounge beside hand-carved marble elephant panels.
Lunch and dinner are served daily. A weekend lunch buffet for $16 includes a glass of champagne.
