This white-washed restaurant, evoking an art gallery in a resurrected iconic hotel in the MiMo historic district, has rebranded in the wake of Executive Chef Alex Chang's departure.
While Vagabond's name change is slight, new chef Roberto Dubois completely overhauled the menu under new ownership.
"We have the same goal of presenting unique dishes with the freshest ingredients possible," says Dubois, who has worked at Juvia and Azul after immigrating from El Salvador. "Where we may differ is my menu is more comfort food. I'm not trying to make my guest feel confused and overwhelmed. My dishes make guests want to share, even though they don't have to."
Highlights include cucumber gazpacho ($11), radish carpaccio with olive mousse ($12), cauliflower steak ($12), cobia crudo ($16), grilled octopus ($16), whole organic rotisserie chicken ($39) and whole red snapper (market price).
"The croque monsieur ($11) is one of my favorites. I worked long hours for this recipe, and the truffle gouda that I use is especially made for me."
The Vagabond Club with gin, apple liqueur, cucumber, egg white and lemon ($12) is a leading libation until umami-flavored cocktails roll out.
