Why cook a buffet on Christmas Day when there are others all too happy to carve up helpings of roast beast?

Out west, the Banyan Restaurant (250 Racquet Club Drive, Weston, inside the Bonaventure Resort and Spa) is plating a three-course Christmas dinner, including roasted butternut squash and caramelized apple soul with holiday organic Florida greens, and choice of grilled New York Strip, pan-roasted organic chicken or sautéed local grouper; and a dessert choice of peppermint panna cotta or Yule log.
