Jamaican restaurants are as abundant as McDonald's in and around Lauderhill, but none has succeeded in bringing da jerk to jah people like the Jerk Machine. Since opening their first location near Lauderhill Mall 16 years ago, owners Desmond and Catherine Malcolm have transported the flavors and aromas of irie cooking to five Broward County locations. Every day, the staff prepares jerk-seasoned chicken and pork, beef stew in brown gravy, and curried goat and chicken, all simmering in their respective sauces and native juices. Ample servings are accompanied by spoonfuls of rice and peas to sop up the wetness. While the cuts of meat can be a bit bony or fatty, which is typical of Jamaican eateries, the dishes are all authentic and delicious.
