The menu at Calypso seduces you with its originality, but its preparations of delicious Caribbean fare keep you coming back. The standard-bearer for island cooking in Broward County for nearly two decades, Calypso makes magic with a scorched-conch platter and Cajun-spiced chicken wings seasoned in a variety of sauces, including Jamaican curry, jerk, habanero and ginger-garlic barbecue. Calypso serves distinctive seafood entrées as well, such as yuca-crusted dolphin and West Indies barbecued shrimp. The sandwiches, called cutters, are a highlight, especially one with shrimp, sautéed mushrooms and cheddar cheese wedged inside a Kaiser roll. The desserts are homemade and include pumpkin flan, bread pudding and several cheesecakes, so try to save room.
