Baja Bao restaurant to open July 15 in Wynwood

Updated Aug. 2: Baja Bao's opening has been pushed back to  Saturday, Aug. 19, to coincide with the opening of Veza Sur Brewing Company on the same day.

Baja Bao, a new fast-casual restaurant from Pubbelly Restaurant Group, will open July 15 in front of Wynwood’s Veza Sur Brewing Company.

The restaurant will be housed inside a 32-foot-long food trailer parked on the patio of Veza Sur, and will share seating with the brewery. Baja Bao will serve bao bun street tacos filled with Latin flavors, such as lechón asado, chicken mole and carnitas.

Baja Bao will function as an oversize food truck, traveling around Miami for special events, Pubbelly CEO Juan Fernando Ayora says. But the trailer will mainly stay put at Veza Sur, drawing electricity and water from nearby hookups.

“It’s pretty much the mother of all food trailers,” Ayora says. “It has all the toys you can imagine to make the bao the same quality usually found at our Pubbelly restaurants.”

Baja Bao is the creation of Ayora and founding partner and James Beard Award-nominated chef Jose Mendin (Pubbelly Noodle Bar, Pubbelly Sushi, PB Station), who created the menu. In addition to bao, a fluffy, steamed Asian bun, the menu will offer guacamole, quesadillas, shiitake empanadas, fried calamari rings, spicy edamame and tostadas. Most items will cost $10 or less, Ayora says.

The restaurant, at 55 NW 25th St., Miami, will share its address with Veza Sur, although the truck and the brewery won’t be attached to each other. The 10,000-square-foot brew house, slated to open in late July, will be South Florida’s first Anheuser Busch InBev-funded brewery. Veza Sur tapped the heads of Bogota Beer Company in Colombia and 10 Barrel Brewing Company in Oregon to help launch the brewery.

South Florida breweries typically rely on food trucks instead of in-house kitchens, but there are exceptions. The Funky Buddha Brewery in Oakland Park and M.I.A. Beer Company in Doral serve pub-style comfort food. When 3 Sons Brewing Company opens later this year in Dania Beach, it will offer wood-fired pizza and charcuterie from chef Nicolay Adinaguev.
